Processor's impressions: Pale strawberry colour, aromas of white peach, forest strawberries and grapefruit. On the palate it is sharp, fresh, mineral and sapid, and encourages a long drink.

Elaboration: The clarets are produced "in the vineyard", plots where there are vines of white and red grapes in different percentages depending on the availability or the preferences of the winegrower when he planted them. The aim was that this diversity would protect the harvests from possible frosts or diseases, given that each variety has different vegetative cycles, thus minimising the risk of possible calamities. The white variety gives the wines more acidity and makes them more stable. Early harvest, maceration and start of fermentation with the skins. After three days the wine is devatted, fermentation in stainless steel tanks with wild yeasts, temperature control, no malolactic fermentation.
Characteristics of the vintage: 2021 was characterised by low rainfall, barely 300 mm between January and October. These weather conditions favoured the cultivation of vines with hardly any phytosanitary treatments.
The first part of the winter was cold and dry, which was beneficial for the pruning wounds to heal properly. In January, the squall left us with significant snowfalls, with the consequent accumulation of water reserves in the subsoil. Fortunately, the Hoya de Huesca region did not experience the negative effect of extremely low temperatures that Filomena brought with it in other provinces. Spring opened with warmer than usual temperatures and hardly any rain, which meant that the plant sprouted earlier. However, a colder period soon followed, causing the vines to stop vegetative growth. Veraison began in mid-July. In general, the summer of 2021 was mild and cool, without the damaging heat waves that August usually brings. September was warm, stable and dry to round off a perfect phenolic ripening, as we have rarely had before. The extraordinary state of health of our grapes has allowed the fermentations to be progressive and complete, obtaining wines that enjoy a magnificent balance, with moderate alcohol content and showing that refreshing acidity that makes our wines attractive and easy to drink.
