In Madrid and the Gredos area, autumn was warm and with good rainfall that helped the vines to recover after the harvest, but the really unusual episode was the Filomena squall in January, with record snowfalls and temperatures that reached -10ºC. The white blanket provided good water reserves. The white mantle provided good water reserves, March and April had late frosts that did not affect the white grape vineyards. Subsequent flowering and renneting were satisfactory, while a summer with normal temperatures led to excellent ripening and a pleasant harvest.

Elaboration: Vino de baja intervención, artesanal. Uva despalillada y parcialmente estrujada, el mosto-vino está en contacto con la pieles 40 días para extraer todo el alma de este terruño. Fermentación espontánea con levaduras salvajes en pequeños depósitos de acero inoxidable. Reposo de seis meses en barricas usadas de 600 litros. Embotellado sin clarificar ni filtrar.
Impressions of the processor: with a grey colour with a pink background due to its long maceration, we find a wine with aromas of white peach, green currant (citrus) and freshly cut hay, the time spent in wood has done its job, being the sensory perception of this one scarce, balanced, fine with a wide mouth and a final with a pleasant bitterness, we can consider the vintage 2021 as of great quality.
