Elaboration: artisanal. The grapes are destemmed and partially crushed, the must-wine is in contact with the skins for 40 days to extract all the soul of this terroir. Spontaneous fermentation with wild yeasts in small stainless steel tanks. Resting for six months in used 600-litre barrels. Bottled without fining or filtering.
Impressions of the processor: with a grey colour with a pink background due to its long maceration, we find a wine with aromas of white peach, green currant (citrus) and freshly cut hay, the time spent in wood has done its job, being the sensory perception of this one scarce, balanced, fine with a wide mouth and a final with a pleasant bitterness, we can consider the vintage 2021 as of great quality.
Bottling: February 2021, not clarified, filtered or stabilised.
Of the 2021 vintage, 1,025 bottles have been produced.
