Producer impressions: With a gray color with a pink background due to its long maceration, we find a wine with aromas of white peach, green currant (citrus) and freshly cut hay, the passage through wood has done its job, being the sensory perception of this sought-after scarce, balanced, fine with a wide mouth, finish with a pleasant bitterness, we can consider the 2021 vintage as of great quality.

Elaboration: Handmade. Grapes destemmed and patially crushed. Spontaneous fermentation in 600-litre boots, the must-wine remains in contact with the skins for 40 days to extract all the soul of this terroir, two rackings and again return to the wood where the wine is cleaned by natural decanting and completes the maturation process.

Agricultural cycle 2020-2021

In Madrid and its Gredos slope, autumn was warm and with good rainfall that helped the vines recover after the harvest, but the true unusual episode was the Filomena storm in January, with snowfalls like never before. and temperatures that reached -10o. The white mantle provided good water reserves, March and April had late frosts that did not affect the white grape vineyards. Subsequent flowering and fruit set were satisfactory, while a summer with normal temperatures led the grapes to excellent ripening and a pleasant harvest.

Elaboration: artesanal. Uva despalillada y parcialmente estrujada, el mosto-vino está en contacto con la pieles 40 días para extraer todo el alma de este terruño. Fermentación espontánea con levaduras salvajes en pequeños depósitos de acero inoxidable. Reposo de seis meses en barricas usadas de 600 litros. Embotellado sin clarificar ni filtrar.

Producer impressions: con un color gris con un fondo rosa debido a su larga maceración, nos encontramos con un vino con aromas a melocotón blanco, grosella verde (cítrico) y heno recién cortado, el paso por madera ha hecho su trabajo, siendo la percepción sensorial de ésta buscádamente escasa, equilibrado, fino con una boca amplia, final con un agradable amargor, podemos considerar la añada 2021 como de gran calidad.
